Lamb Tenderloins with Garlic, Cumin and Coriander Recipe

1 Gourmet Direct Lamb Tenderloin
1 x 500gm pack Gourmet Direct Lamb Tenderloins
2tsp Cumin seeds
2Tbsp olive oil
1tsp freshly ground Coriander seeds
3 cloves fresh Garlic, crushed
Put the Cumin seeds in a small fry pan and set the pan over a low heat. Cook for several minutes until the seeds are fragrant. Grind in a liquidizer. Mix the ground Cumin, Olive Oil, Coriander seeds, half a teaspoon salt, pepper and Garlic into a shallow dish.
Add lamb and marinate for several hours. Cook over a hot BBQ or indoor grill for about 2-3 minutes a side, or well coloured but still juicy and pink inside. Transfer to a heated plate and sprinkle with salt. Rest the tenderloins for 5 minutes, then serve whole or slice thickly.
Serve with fingers of fried eggplant and a chick pea, yellow pepper and black olive salad dressed with a Yoghurt, Mint and Garlic dressing.
